- LEG OF LAMB -
1. Pre-heat oven to 425°F.
2. Remove roast from refrigerator and let sit at room temperature for 30-45 minutes.
3. Place roast on roasting rack and brown in the oven for 25-30 minutes.
4. Drop oven temperature to 275°F and continue to cook until the roast reaches and internal temperature of 118-124°F. Don't worry if you're off a degree or two.
5. Remove roast from the oven and let rest for 25-30 minutes before slicing and serving.
